When it is raining, you might feel like staying at home and bake something sweet for your friends or family.

Something like delicious cookies.

We recommend making these delicious Chocolate and Raspberry cookies.

I guarantee you that just making these cookies will make you feel better and when you taste them, your day is going to be great!

So how you actually make these cookies and what are you going to need?

    • 200g of dark chocolate (at least 70% of cacao)
    • 75g of butter
    • 225g of cane sugar
    • 2 eggs
    • 1 teaspoon of vanilla extract
    • 150g of plain flour
    • 1 teaspoon of baking powder
    • 150g of raspberries (preferably fresh not frozen, I also used blueberries in this recipe)

Preheat the oven to 180 °C.

Prepare 200g of dark chocolate and break into pieces, put the chocolate into the bowl and place it over the pot with boiling water to dissolve.

Mix butter and sugar with electric mixer until is smooth and creamy.

Gradually add eggs and vanilla extract and keep stirring. Add chocolate when it cooled down.

Add also baking powder and flour and mix all together.

Add raspberries to the mix (and blueberries in this case).

Prepare the baking tray, place the baking paper and use ice cream spoon to make scoops.

cookieBake the cookies for about 10 – 15 min.

cookieAt this stage, you can smell the chocolate and raspberry cookies in your house and it makes you hungry and impatient to taste them.
