Amazing Italian Food in Amsterdam: Tasted and Recommend it!

Where to find delicious Italian food and products in Amsterdam?

Today I’m going to write about an Italian girl named Chiara, who thanks to her passion for good food has started a small company in Amsterdam with Italian luxury products. Not luxury because they are expensive, but because they are extraordinarily good!

We have known Chiara by chance through friends we have in common and after a small chat, we realized that we have the same passion, which is the passion for food especially for Italian food.

When I started travelling and living in different countries(about 18 years ago) it was always very difficult to find Italian products at that time. Most of them were the classic and fake products MADE IN ITALY which had nothing to do with Italian food however people would still buy these products thinking that is real Italian food.

The difference now is that you will still find the fake Italian products, but in addition, you will also find well known Italian International brands selling ´real´ food on a large scale.

This step could be considered as positive but think about it from a different business perspective. When a product has millions of sales and enters the foreign market, its production is affected by lowering the quality.

Do you really think that all pasta or mozzarella is exclusively produced in Italy?

If you follow us for some time, you already know that I am a Chef and I like to have at home as many good products as possible. I can say that to have good Italian food at home transmit positive emotions and generate memories from home.

As mentioned before, I always try to find the Best of Best Italian products in each country I was living in for some time. Thanks to Chiara and her company Chiara´s food which sells selected Italian products in Amsterdam, is much easier for me to fill my kitchen with great products.

Chiara´s food has a motto: from Good People for Good People. Her project is based on selling products of small producers from Southern Italy who continue to make their productions on a small scale with the highest quality. All produce is handled by means of handmade processes with the maximum respect for the Italian tradition and its extreme quality.

Every month you can order the products through her website, based on the orders she will receive shipping package from Italy and then deliver the products to your home. This way she can guarantee that all products will have the maximum quality and the lowest costs for the customers.

At FunFoodTravelling, recently we had the opportunity to cook with these products. We invited Chiara to our kitchen to prepare delicious dinner and taste her products. I can assure you that the products are of the highest quality as it was a long time ago I could find tomato sauce of this quality! It let me think of my grandmother and her delicious pre-tomato sauce (Passata di Pomodoro).

This recipe has been created thinking about serving Antipasti before the first course, and a dessert later. Remember to not measure the amount of pasta as Italians never do it and to cook it based on your feeling and taste.

Italian pasta with Eggplant, Tomatoes, Guanciale and Ricotta Salata

Ingredients

  • 500 g Pasta
  • 1 bottle Tomato sauce
  • 400 g Guanciale Italian cured pork
  • 100 g Ricotta Salata
  • To taste tbsp Olive oil Extra Virgin
  • 1 onion
  • 1 clove garlic
  • salt and pepper
  • 1 fresh basil
  • 4 tbsp Sunflower oil for frying
  • flour for frying
  • 100 g Parmigiano Reggiano

Instructions

  • Cut Eggplant into small cubes approx 1.5 cm, add salt and leave it for 1 h with something heavy on top (this serves to remove the bitterness from the eggplant)

  • Cut Guanciale into cubes and put them in a saucepan, stir fry until its crispy. In this step, you do not have to add oil because guanciale will release a lot of fat. Put the meat aside for now.

  • Cut the garlic and onion into very small pieces, put the saucepan back on the fire with olive oil, garlic and onion and cook it slowly.

  • When the onion and garlic are cooked well, add the guanciale meat and tomato sauce. Increase the heat for a moment and return it to the minimum heat to cook it slowly, at least for an hour (I had time to cook it for 3 h).
    Remember to add a bit of water so you will avoid burning the tomato sauce and this way you can cook it longer.

  • Fill a saucepan with water and salt (more or less a ratio would be about 15gr x litre of water) and bring it to boil.
  • Prepare a saucepan with sunflower oil, remove the salt from the eggplant and dry it well, pass the eggplant through the flour and fry it until it is golden brown, put the eggplant on absorbing paper and set aside.

  • Taste and adjust the sauce if necessary. In this case with the products from Chiara I did not have to add sugar or salt at all as the product was already well equilibrated.

  • Put the pasta to cook when the water begins to boil and cook it for 12 min (the cooking time on the package was 15 min).
  • Meanwhile, the pasta is cooked, add the eggplant to the tomato sauce, prepare Parmigiano cheese and fresh basil.
  • When the 12 minutes passed, drain the pasta (reserve a bit of water from the pasta), add the tomato sauce and water from the pasta and let it cook for a few more minutes.
  • When you see that the pasta is ready (we like it al dente), add the Parmigiano cheese, olive oil and the basil leaves, salt and pepper.
  • Serve on the warm plates and sprinkle ricotta salata on top!

This is our recipe which with Chiara´s products was even more delicious. The truth is that it was so delicious that we decided to collaborate on a project.
